Downtown South Bend is going green!
Jun 8th, 2010 by Tom

Bicycle races, workshops, displays and a speech are some of the ways people can celebrate the Green Weekend downtown Friday and Saturday.

Green weekend activities kick off at the Century Center and Island Park, located at 120 South Saint Joseph Street. Friday’s festivities will include a very special Keynote Lunch & Learn*, A Green Workshop Series presented by local and regional business leaders and experts in the environmental sector, plus free exhibits offering green business and educational opportunities to all members of our community. We’ll wind down the day with a green celebration on Island Park where you are invited to join us for live music, food & drinks while surrounded by the beautiful St. Joseph River. All exhibits and workshops are free and open to the public.
The biggest event Saturday probably will be the Eco Fest Criterium, a bicycle race featuring amateur and professional racers on streets in the neighborhood.  Race registration opens at 10 a.m., and the cycling begins with the women’s open category at 11 a.m.   Races will continue throughout the day. The race is sanctioned by United States Cycling and will be held rain or shine.  To register, go to www.Truesport.com or call race director Dave Beaverson at (574) 226-6415.

Lime Salmon
Feb 21st, 2010 by Alice

The weekend is coming to an end, and maybe you are thinking about dinner plans for the week ahead. Here is an easy, healthy dinner recipe. The first time I made this recipe for a private dinner party, it got rave reviews. Sometimes simple can be as wonderful as a meal that takes hours to prepare.

Lime Salmon

salmon filets
salt and pepper
4 tblsp. butter
one lime

Season filets with salt and pepper. Melt butter and add the juice of the lime along with the zest. Grill or sautee the salmon on one side and then turn over and brush with the lime butter. Once the salmon is done, brush with more lime butter.

Very easy and so tasty. Serve with some steamed vegetables and a maybe a baked sweet potato and a salad, and dinner is ready!
